I would like to give you the recipe for the spinach....you will need=500 gr.leaves of spinach(blanched),200 gr. basmati rice,150 gr. pure olive oil,2 red medium onions(chopped),8 fresh onions(cut in small pieces),150 gr. retsina wine or other white wine,1 tablespoon of tomato paste,1 cup of chopped parsley and dill,salt and freshly ground pepper to taste...how to do it=
put the oil in cooking casserole over medium heat to burn a little and put in both the onions,mix until golden brown,after that put the spinach leaves and mix again all over,pour then the wine,let cook for 2 minutes and add the tomato paste and mix,then add 2 cups of water and bring to a boil and you are ready to put salt ,pepper and the rice,mix well,let simmer for 20 minutes,5 minutes before the end put in the herbs,check if it might need some water,take away from heat ,cover with a clean kitchen towel,let stand for 5 minutes and its ready to be served,put it on deep platter and pour over it the juice of one lemon,,,,, it goes nicely with yogurt and a salad of tomatoes,cucumber,olives,feta cheese,red onion in thin slices,olive oil and vinegar.
