Ingredients:
4 eggs
2 cups of flour
2¼ cups of milk
¼ teaspoon salt
¼ cup or ½ stick of butter/margarine
Making the Crepe Batter:
1. Start off by breaking 4 eggs into a large bowl 2. Add ¼ teaspoon of salt to your eggs 3. Whisk your eggs and salt together until the eggs look uniformly yellow 4. Start adding some of your flour to the egg mixture 5. Whisk the flour into the eggs 6. Whisk some milk into the batter and keep alternating between milk and flour until you’ve added it all 7. Whisk the batter until it is smooth to get rid of any lumps 8. Add the melted butter into the batter and again whisk until smooth 9. Cover the batter and refrigerate to be used for a later time or start cooking crepes now!
Cooking the Crepes:
1. Preheat your stove to medium heat 2. Use a non-stick skillet for your crepes, be sure to adjust the amount of batter with pan size (8 inch pan uses about ¼ of a cup of batter) 3. Pour the batter into the pan 4. Twirl the pan around as you pour 5. Fill in any gaps by twirling or adding a little extra batter 6. When the crepe is a golden color, easy to slide around and you can see your spatula through the crepe it is ready to be flipped 7. When both sides of the crepe are done, place it onto a plate and garnish it with your favorite filling!
