elegant egg puffs....
2 cups of sifted flour
2 cups of water
1 cup of butter
8 eggs
1/2 teaspoon salt
5 envelops of vanilla....
1.In a large saucepan bring water,butter and salt to a boil.Add flour all at once and cook over medium heat,stirring constantly,until mixture leaves side of pan and forms a ball of dough.
2.Remove from heat,let cool enough so you can add by hand,one by one the eggs,until you get a mixture smooth and glossy.
3.Boil 1 cup of water,2 cups of sugar and 1 cup of honey,for 5 minutes,take away from heat and cover to keep warm.
4.In big frying pan,pour vegetable oil, over high heat to get hot.
5.With your hands moist with oil,cut pieces of dough and form balls the size of a big nut,as in my picture,then each ball press it in palm to make a disc and with one finger make a hole in center,as shown in picture,then fry in the hot oil,both sides,until golden brown,stain in paper towel.
6.Dip in syrup,until moist,then serve with cinnamon.
There is another tip here...
instead of frying the puffs ,make bigger balls with dough,put in baking sheet,enough appart so they won`t stick together while puffing,bake at 400 F ,for 35 minutes,take out of oven,turn off the heat,make a slit in the side of each puff to allow steam to escape,return to oven and let them stand for 15 minutes,with oven door ajar.Remove from sheet and cool on a wire rack,then fill them with filling you prefer and top with Chocolate Glaze.
